Wine Production area: Poggio Mirteto – Italy Grapes: Pecorino Soil type: sandy-clayey soil. Training system: guyot Plants per hectare: 4,600 Alcohol content: 12.5% vol. Total acidity: 6.80 g / l Sugar: 13 g / l Vinification technique: the grapes are harvested by hand in small boxes with selection of the bunches in the vineyard and in the cellar. Thanks to the use of soft pressing and temperature-controlled fermentation, we guarantee the transfer of the best aromatic molecules present in the grape to the must. The wine-must, Spumante base, is fermented in a first phase in steel tanks while the second fermentation takes place in an autoclave with the Charmat method at 12 ° C for 30 days. Characteristics: pale straw yellow color with bright reflections and a fine and persistent perlage. Delicate and persistent, fruity and fragrant bouquet with floral hints of broom. On the palate it is fresh and full, with excellent minerality and good acid structure. The liveliness and fragrance enhance its persistence. Food pairing: Perfect as an aperitif, ideal with typical Mediterranean seafood dishes. Also excellent in combination with shellfish (fish tartare) and fruit cream cakes, exceptional at the end of the meal with strawberries. Serving temperature: 6°-8° C
